The Bistro, originally known as The Rising Sun Bistro and Market was founded in 2014 by Catherine, a stay at home mom of 25 years. Her vision for a restaurant in downtown Brooksville where you feel like you are walking into a friends home is evident every time you visit. Our building in the heart of historic downtown was built in 1915 as an American Grocers store. it has been many thing over the years including hardware store, a dress shop and a newspaper office. We are thrilled when people stop in and share their memories of days gone by and their connections with this building. With a menu as unique as the building and the decor, each visit is sure to be a new experience. With the addition of our wood fired pizza oven in January 2022, we have expanded our menu to include individual artisan pizzas. Our dough is handmade everyday on site and we use only the best toppings to produce a pizza you will keep coming back for. Our pizza selection is as unique as the rest of The Bistro with unusual flavor combinations inspired by some of the countless independent pizza shops we have visited in our travels.

With the opening of our second location July of 2022 at 108 W Main St. in Inverness Florida you will be able to enjoy our unique fare and artisan wood fired pizzas in another historic downtown setting. This location operated by Catherines son Jordan and his wife Luci is a smaller mor intimate setting that also offers outdoor seating so you can enjoy the beautiful courthouse square.
